Organic Soba Izumo noodles
The Soba Izumo, one of the three main types of Soba in Japan, has a darker appearance than most Soba. Indeed, buckwheat seeds, called "Gen-Soba" and whose ecals are attached, are ground according to the "Hikigurumi" or "Ippon-Gurumi" method, where entire buckwheat seeds are kneaded in buckwheat. The texture and firmness of buckwheat are unique and the flavor of buckwheat is much more pronounced.
