A delicate blend created from four types of koji. It combines the sweetness of raw soy sauce (nama shoyu) with the richness of cooked soy sauce (kamishoyu), through a layered brewing method, providing the perfect balance. This soy sauce maintains its freshness for up to 120 days after opening, even when stored at room temperature.
