The matured soybean sauce (reworked) is made by fermenting and matureing Koji with raw soy sauce (freshly squeezed soy sauce that was not heated) instead of salt water that is Used to manufacture ordinary soy sauce like dark soy sauce. It is also known as "sweet soy sauce" and has a rich, tasty and sweet flavor.
