
Udon Kombu
It is a Black Oboro Kelp elaborate, manufactured by Kelp craftsmen. The only ingredients are kelp and vinegar. The kelp is first soaked in vinegar, then the surface of the tender varech is scraped and the black varech OBORO comes out. This part becomes the kelp with acid taste. If you scrape more for a while, the white part inside the Varech will come out. It's the kelp that has an elegant sweetness. The Craftsman of the Varech mixes these two types of kelp, respecting the balance, and manufactures the "Varech Udon".
