Cooking Tips

For 80g of noodles, use at least 1 liter of boiling water. Plunge the soba into the water and stir gently to prevent overflowing. Cook over high heat for about 4 minutes 30 seconds, then adjust according to desired texture.

Serving Suggestions

Zaru soba (cold): Immediately rinse the noodles after cooking under cold water, ideally with iced water, then serve very fresh with a dipping sauce.

Kake soba (hot): Rinse the noodles after cooking, briefly dip them in hot water, then serve with hot broth.

For best results, prepare the sauce and accompaniments before cooking. Do not overcook the noodles to preserve their firm texture and authentic taste. Soba are best eaten immediately after preparation.
