This medium-sized Shiitake Donko fungus is only produced in Oita, a major dried shiitake mushroom producer. These Shiitake mushrooms are grown on traditional shutters and have excellent taste and texture. Shiitake fungi should be soaked in water for at least 5 hours in the refrigerator.
