Hi-Me

Hi-Mi is a Japanese flavor enhancer designed to naturally boost the umami in your dishes. Its formula combines the umami components of kombu (seaweed), katsuobushi (dried bonito), and shiitake to bring a deep and balanced flavor to many recipes.

Highly concentrated, a small amount is enough to intensify the taste of broths, sauces, stews, ramen, udon, soba, or even meat and vegetable dishes. It enhances flavors without masking the natural taste of the ingredients.

Thanks to its excellent heat resistance, Hi-Mi can be added at any stage of cooking while retaining its full effectiveness. It is particularly appreciated for giving more body and richness to strongly flavored dishes.

Usage Tips

To enhance a ramen, udon, soba broth or a stew, add about 1 g per 1 liter of preparation. To add more depth to sauces (yakiniku, donburi, ramen, etc.), use 2 to 4 g per 1 liter. Adjust the dosage according to the desired intensity of taste.
