San-Nen Kura white miso from the Ishii Miso brewery, founded in 1868 in Shinshu, is crafted by the fifth master brewer, Ishii Moto. Made with whole Japanese soybeans and Koshihikari rice , this miso undergoes a fermentation process slightly enriched with koji for a balanced flavor and natural sweetness.
