Japanese red beans (red bean seeds)

The history of azuki beans is ancient, and charred azuki bean seeds have been found at archaeological sites dating from the Jomon period to the early Kofun period. Considered to possess mystical powers due to their red color, azuki beans have been used in events and ceremonies and have been closely associated with people's lives since ancient times. The main production area in Japan is Hokkaido.

  • Wash the beans thoroughly.
  • Put them in a saucepan and cover them with water (preferably hot water).
  • Start heating immediately (over high heat).
  • Once boiling, add 400ml of cold water and return to a boil.
  • Throw away the water.
  • Add 4 to 5 times the amount of water for a given quantity of beans (e.g., for 100g of beans, add 400 to 500ml of water).
  • Bring to a boil.
  • Simmer.
  • Turn off the heat and let it cool for about 30 minutes.
